Watch your blood sugar
The chips taste great, and the biggest appeal was their keto and diabetic friendliness. Alas, they do not work. I used some to make coconut/macademia clusters (melt it on top of chopped nuts), and ate some as is. In both of these cases, the blood sugar rose by >50 within 45 minutes. I use monkfruit and dairy on a regular basis, so it does not appear to be those items that cause this increase. The one unknown is soluble corn fiber, and I suspect it is the culprit... theory says it should be resistant maltodextrin, I guess it is not that resistant? TLDR: not keto or diabetic friendly, tastes great.
