If you actually want to learn The Science of Cooking, go get The Food Lab's book. This book seems to have been created to look flashy, so that people would want to give it as a gift; but when you actually get into it, the answers are garbage. Although already thoroughly disappointed, the moment at which I closed the book, never to open it again, was after reading the answer to "Why preheat the oven" to which the answer was "to make it hot". Many of the answers in this book are of similar depth.
