Newer versions = lesser quality = concerns for food safety
I purchased my first Victorio steam canner for our commercial kitchen about three years ago and it was a quality product with no complaints or defects. I purchased a second model of the same type about 15 months later also for the commissary, and a third canner about six months ago for home use only. The loss of quality of the second and third canners is remarkable. The lid is not as heavy, which allows a lot of steam to escape through the sides and not through the vent, requiring me to weigh the lid down. More troubling is their gauge. The second and third canners now have water droplets inside the gauge, which do not resolve and exacerbate once the canner is heated. It makes reading the pressure very difficult, and as there is now steam inside the gauge I have concerns about precise readings. I replaced the first gauge within a year and now the latest canner has the same problem. Even more troubling is that the third canner will barely come up to the correct pressure for timing - it sits right at the edge unless I move it to a more powerful burner. I think the manufacturer needs to review its quality control. Food safety is of utmost importance and I hope this does not cause it to lose its NCHFP rating.
