Disappointed. The recipes have obvious errors that cause failure to duplicate the dishes at home. Discovered many to be way too salty. I am a baker and found the bread recipes inaccurate, especially the house bread. I understand the methods, but the ratios are way off. Water quantites are not listed under ingredients but are buried in the recipe instructions. At one point the recipe instructs to mix the yeast, salt, and flour for 12 minutes but does not say to add water until the poolish is added later. Doesn't make sense. Also using 8 1/2 cups of flour for one loaf of bread is insane. Very frustrating to try to figure the recipes out yourself from this purchase There are much better books out there. I would not waste money or time with this one.
