It's pricey, but it'll last you forever, so just buy it!
I've known about monkfruit since I was a kid, so literally for almost 40 years now, but in its whole, dried form. It was always used to sweeten soups and dishes, or a piece would be given to me as an afternoon treat to suck on like candy that never lost its sweetness. It wasn't until starting the keto diet that I discovered that it was available in powder form, didn't spike blood sugar, and was a great sugar substitute. I held off on buying this stuff for a long time because I thought it was cost-prohibitive, but I finally bit the bullet, and I can't believe I waited so long! It's incredible! I am a longtime stevia user (or stevia/erythritol blend user, more accurately), and I didn't think anything could be better, but this beats it, hands down. The sweetness is so much smoother than stevia, it's less harsh, and has no discernible bitterness to it. Plus, it has a sort of caramelized, "brown," rich taste to it that works well in everything I've added it to thus far. Mixed with erythritol, it makes a perfect sugar substitute, and you need such a small amount that this bag will last me forever. Huge thanks to Purisure for making such a wonderful product available! Update, June 3, 2020: I'm still on the first bag of this stuff, and I don't think it's even half gone. The zip-top bag has kept it fresh, and I've noticed no discernible change in taste or quality. I use this all. the. time. so to say that I still have any left, let alone at least half of the bag, is incredible. I've completely stopped using the stevia/erythritol blend I was so sure was the best (Pyure), and exclusively make my own sweetener blend with erythritol and this monkfruit. To make it more usable, I actually blend the two in an old Magic Bullet until I get powdered sweetner, which I can then use in all of my keto baked goods and drinks, and which helps mitigate some of the re-crystalization that erythritol is known to do. The amount needed to bring erythritol up to the sweetness of sugar is comparatively minuscule, so the bang for your buck in this product as compared to something like Lakanto (which is essentially the same thing - erythritol and monkfruit) is out of this world. I'll still say that, yes, the initial outlay of cash may seem like too much for so little product, but it's been 9 months that I've been using it, and I can easily say that for a year+ worth of sweetener, it's a great value.
