One of my family's favorite meals involves me cooking a whole chicken in the Instant Pot to make stock for the base of this dish. The flavor is so much better if I can remove the fat from the broth, and lately that has involved cooking the chicken the night before and chilling the broth overnight to get the fat to solidify, making it easier to remove. In an attempt to speed things up I've purchased three different fat separators in the past and have been disappointed in them all. This one however, is a game changer. The cup that holds the liquid actually has a silicon plug that is directly in the center of the bottom of the cup. Once the stock has settled and the fat rises to the top, I can unplug the silicon plug, letting pure, non-fatty stock through the bottom of the cup, while the fat stays at the top, without any spilling over. This seriously has saved me hours. And it comes with a free peeler too! Very happy with this purchase!
