I love this hand-held mandoline! I did botch my first try but nailed it on the second one. The first time I used it, I set it on the thinnest slice and tried to do it fast a la Anne Burrell. The resulting slices were indeed thin but uneven - most of them were half-moons. I baked the chips and they ended up sticking onto the pan because they were so thin like paper. On my second attempt, I used russet potatoes and yams and set the mandoline on the thickest slice setting. I also didn't cut as fast as I did before so that I have more control of my downward strokes. The result was perfect slices! I fried the chips this time in an enameled cast iron dutch oven at 350 degrees. Took around 3-4 minutes to crisp up. The yams cooked much quicker. Tip: The mandoline is quite narrow so I angle the potato to get longer slices. I hold the potato with my hand but when it reduces down to about 1-2 inches thick, then I use the hand guard. All one needs is common sense when using this product. I've never had problems with the food getting stuck under the blade and never cut any of my fingers even once. Overall, I'm highly satisfied with this product. I have a food processor with a slicing attachment but I don't want to mess with the food processor unless I cook for several people. Too much stuff to clean up. This mandoline is perfect for cooking for two because it's so easy to handwash. 100% recommended!
