Yes, you can use this in coffee!
If you are wondering whether you can use this to make butter/bulletproof coffee, you absolutely can! I use a couple scoops of this and some mct oil, it incorporates much better than solid butter. I can also keep it in the coffee station instead of trekking to the fridge. I use a hand blender to get a good froth going, it tastes wonderful.
