Great stuff, wanted to review this since it seems like the other reviewers are doomsday preppers who haven't tried... opening it and eating some. I've had it open around 3-6 months, it's still fine. Claims to expire a year after opening, which is actually a problem--it's huge, and I'm one person. Smaller containers at the same price per pound would be nicer. If you just mix it with water and put it in a pan, you get a perfectly flat pancake of scrambled egg. It's strangely homogenous with no texture, but tasty enough. Combined with other ingredients, you can't tell the difference. I use it together with dry milk to make just-add-water baking mixes. Also, it's around twice the price of fresh eggs around me. Edit: Took me about a year and a half to go through it after opening--was still fine by the end in baking mixes, which is what I use it for
