Great machine but not enough rest time.
This machine is seemingly well-made and designed however, the automatic cycle doesn't allow enough time for the dough to rest before excruding. Any old-time pasta maker will tell you that the dough needs to rest for at least 30 minutes before forming it into pasta. The reason is that the microscopic flour kernels, especially semolina, are like little bits or hard flour and it takes some time for the moisture to penatrate them. Also, the gluten needs to relax and that takes time too. This machine goes through the entire process so quickly that there isn't enough time for these things to occur. Yes, you can always let the formed pasta rest after it's made and yes, most people will not be able to tell or even care that the pasta is hard and unrested. But I can tell and I imagine others can too. People can confuse al dente pasta with hard unrested pasta but there is a difference. To address this I stop my machine just before that excrudes and wait for 1/2 hour then start it up again and let it run the whole cycle. The pasta also goes through the excruder easier. Get this machine but give your dough a rest.
